Cheeseburger Soup #2
A cheeseburger soup rich in hamburger and vegetables.

- 1- 1 1/2 lb. hamburger, fried
- 3 cups chicken broth
- 2 Tablespoons butter
- 2 large carrots, sliced thin (approx. 3/4 cup)
- 2 stalks celery sliced (approx 3/4 cups
- 1 small onion, diced
- 4 cups peeled, diced potatoes
- 2 cups shredded cheddar cheese
- 1 tsp. parsley
- 2 Tbsp. Mustard
- 1-2 Tablespoons flour
- 1 1/2 cups milk
- 1 Tbsp salt
- 1/2 tsp. pepper
- 1/2 cup sour cream
Melt butter in kettle
Saute celery, carrots, and onion together in butter
add chicken broth and cook vegetables until tender
Add fried hamburger and seasonings (Salt and pepper)
Add parsley and mustard
Mix flour with 1/2 cup milk; stir into boiling soup, stirring
Continue to stir until soup starts to thicken; then add remainder of milk
add cheese and stir until melted
When cheese is melted, take off heat and add sour cream
