Broccoli Cheddar Chowder

A simple, tasty and nutritious broccoli cheese chowder that fits the bill any day of the week.

Ingredients
  

  • 2 cups water
  • 1 cup celery chopped
  • 1 cup carrots sliced thin
  • 1/2 cup onion chopped
  • 1 cup broccoli - cut into small pieces
  • CHEESE SAUCE
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 4 cups milk
  • 4 cups grated cheese
  • 2 cups ham or bacon chopped into 1/2 inch cubes
  • garlic powder optional

Instructions
 

  • In large saucepan, combine water, celery, carrots, and onion.
  • Bring to a boil and simmer for 5 minutes
  • Add broccoli, and continue to simmer until the vegetables are tender/crisp
  • SAUCE:
  • Melt butter in kettle
  • Blend in flour, salt and pepper and garlic powder
  • Cook, stirring together until it thickens, about one minute
  • Add milk and stir until mixture thickens
  • Stir in cheese and ham cubes
  • Combine mixture with undrained vegetables
  • Stir and serve
